Tonight is going to be baby back ribs 4-ways with mashed potatoes. The 2 racks of ribs are being cooked for 24 hrs, sous vide with each having different rubs. Then half of both racks is going to be fried and the other seared. Also making from scratch bbq sauce.

Also have a slab of pork belly on the “smoker” to make BLTs tomorrow. Has anyone used the pork belly from Costco? It didn’t look like it had the skin on, didn’t feel like it had skin on, but as it is cooking looks like the skin was on...wtf?

They were incredible, picked them up from HEB yesterday. I caught the butcher as he was putting them out in the meat counter.
I don’t know wtf is going on with the HEB near us...but their quality has tanked recently. The produce is shit, seafood is shit, and the steaks...****ing shit.

I think HEB has different levels of stores. The one by us is mega store, the one by my in laws is much smaller and their selection sucks. That being said I still like Kroger more for meat.

The bacon definitely had the skin on. Next time I’ll cut the slab into smaller pieces and try different brines. This one ended up a little salty. We will see how the sandwhichs turn out tomorrow.

The bacon definitely had the skin on. Next time I’ll cut the slab into smaller pieces and try different brines. This one ended up a little salty. We will see how the sandwhichs turn out tomorrow.
Add a little butter and red pepper flakes in a pan and crisp up the belly with it, the spice should help kill the salt a bit, dont use salted butter though;)
