Kung Pao Chicken. Still trying to learn these Chinese dishes as they are fave of the better half.

Sousvide porterhouse and the fixings last night. Used the wooden steak plates I received as a gift.

Does anyone know the purpose of the wooden steak plate?

They very well may, but he also has his own catering business as well as competed for almost 20 years now I believe. When someone who’s had it all says it’s the best he’s used what can you say.

Last I checked, the PB used thinner steel, had a smaller hopper, less cooking area and a shorter warranty and from many reviews their CS sucks. I’ve also heard they’re prone to constant over/under shooting. The quality is night and day when you’ve played with them both.

It’s like choosing cars, both will get you there...

That all well may be true.

I will say my PB Combo weighs 172 pounds and feels very solid. 22lbs of pellets will do everything I need.

Salad topped with chicken

Day 45 of dry aging a full tenderloin tomorrow. Haven't decided when I'm going to eat it. Original plan was to have some after 45 when my parents came to visit and then put leftovers in another bag for another 45. The bags are only good for 45 days but I have already transfered the loin to a new bag 10-14 days ago and my parents cancelled their trip so... I guess let it go longer.
