127.5deg is my sweet spot. I landed on this temp by splitting the difference between the temps suggested by the recipes that came with the sous vide cooker for rare and medium rare.

Time wise, I cook for 1hr (45min for filets) and sear on a cast iron skillet about 45sec per side for me

You try those badboys out yet UM? I need to live vicariously through you

I didn't get any pics from our night on Thursday because I was busy cooking, lol. My buddy got some colossal Stone Crab to start us off. Those are tasty. Next we hit up some caviar (never had it before) and that was pretty tasty. We made our own blini's but found that potato chips were better, lol. I made two different kinds of Poke with the Tuna that cam in the caviar combo pack (it was a facebook ad on my feed, lol). The A5 was next, I sliced it into 1" strips and cooked each side a little bit on a cast iron pan. Worst part of the night is ruining my Sous Vide egg. I let my water get to hot and it overcooked the egg so we couldn't use it for dipping sauce. All the food was great but it couldn't compete with the Drink! Fun fact, the gold foil around the neck of the bottle is actually 20k real gold. I almost had to take out a loan to buy it but it's so worth it. YOLO! lol.

Finished cuisine. Dinner consisted of grilled Wagyu steaks with homemade rub, pan seared crab cakes, asparagus with homemade hollandaise sauce, redneck tater salad, fresh baby green salad, sauteed mushrooms, French baguette bread, Justin Cabernet Sauvignon, as ns grace starting the meal.

Yum. Looks fantastic! I dunno how you ate that much Wagyu with all the fixings but congrats! What did you drink with it?

Those crab cakes look YUMMY. A friend of mine gave me her crab cake recipe years ago, and every so often I break it out for a special dinner. Nothing like great home-made crab cakes!

We are feeding two growing boys two! The teenager grew 4 inches in 6 months. We had a California Cabernet sauvignon called JUSTIN

The wife wanted to be a chef when she was younger. Her new focus of discovery is central American cuisine. I have nothing really to compare it with, but it's a hit with the boys and I.

Those crab cakes look YUMMY. A friend of mine gave me her crab cake recipe years ago, and every so often I break it out for a special dinner. Nothing like great home-made crab cakes!

I really enjoy crab cake sandwich with the sauce she makes and all the other fixings.

I constantly tell my boys they better learn how to cook, because they will be hard pressed to find a woman that can cook like their mom.
