The land of commies and socialists!
I am trying to figure out what is best between the two. Jet looks great and seemingly performs great but I wonder if it is worth it compared to a local guy doing regular ceramic coating? The parts in question here are factory exhaust logs.

I'd love to do long tubes but I live in commiefornia. One of the major things I am looking for is longevity of the parts looking good as ever set I've ever painted last about a year then start flaking. The lowering of under hood temps a very appealing as well.

Thanks.

Knowing nothing about the "local guy", I can't say if it's better or worse.

The most important part of any coating is the preparation. The parts need to be cleaned and blasted on every surface getting coated.

I was just going to point that out. Prep is SO important, whether your doing exhaust parts or brake calipers. Especially when the parts are not brand new. A good coating shop (Jet-Hot or other ceramic) will do the needed prep properly. So if it was me, I'd ask any shop I was considering what their prep process is.
