WHat sort of ET's are folks seeing from stock ST's?

Well, the story with most tuners isn't great. ZFG seems to be the only one with it truly dialed in. He does email tunes, so if you have any issue with a specific gear change, he'll read your data logs and address it. His tune makes the transmission just work well. Eliminates any gear skipping, firms up/quickens the shifts in both Normal and Sport mode. Ford definitely should've taken more time to dial in this transmission before the ExST came to market and most people have complaints about it when stock, no one has complained after his tune.
Now, it is still a 10R60 (sad noises...) so if you go the upgraded turbo route, you'll need a trans upgrade from Level 10.
