Tire Recommendations?

I replaced my factory tires with Nitto 555 Gen 2. Night and day difference. I highly recommend them. I went 285/35R19 on all four. Looks better that way

My car doesn't have crazy HP & TQ but it is putting down 620 HP 630 TQ to the wheels.
I had a set Nitto 555's on the Cobra, wore out quick, not great ride quality or traction. They were garbage for me...

I can't thank you all enough for your help here! I am 100% mainly concerned with traction compared to anything else. With how little I drive the car wear slash mileage is not a concern, even if I only got 12k miles out of a set it'll probably take me 2-3 years to get there. Just want to make sure when I give it some gas I don't need to worry about losing the rear end, because with these stock tires that's already a reality.
Could have helped with the exact tire size and rim used but you really have 2 choices: Nitto 555R or Toyo R888.
With your power and use (and 8 year old junk tires! :) ) don’t over think it and go 555R or R888.
All else is junk for max street traction.

You guys running over 600rwhp can stick MPSS from a dig? I’ve got a well set up drag suspension and I wasn’t too happy with them around 650 at the tires.

Roll racing I have no doubt they’d be fine.

I have a well set up suspension so I'm sure this helps a lot. My mpss are only 295s in the rear also. I won't say I can dead hook from a dig but on a warm day and good road surfaces it does very well and I'm not afraid to stand on it and I can still have plenty of fun in 1st gear. 2nd gear will hook solid. Now if it gets cool out like in the spring or fall season I can blow the tires off in 3rd rolling 30-40 with ease. But for how well they perform all around in dry and wet along with being quite and lasting fairly well I think they are a good tire. I would like to try the Toyo R888 for grip but I heard they are noise, not the best in rain, and don't last very long.

If your main concern is traction then get a drag radial on the back. Do you drive the car in the rain? Toyo TQ drag radials hook up great and do fine in the rain as long as you use your head. Not sure if they come in your size. I've heard really good things up the R888 but no experience. If straight line nice weather traction is your number one priority I wouldn't consider anything else other than a drag radial.

Get your rear suspension in order. Truth be told, no matter what tire you use, if you go with stock size, the GT500 is going to blow them off under full throttle on the street. A sorted suspension will at least make sure you track straight and not put it in a ditch or a crowd. I was playing around yesterday (low 60* sunny day) and blew off the tires a little bit in second. She tracked straight as an arrow the whole time. But I have untold amounts of money in suspension/gearing/differential for that exact result.

How come no one with the OE 19's or 18's go with the same size tire all around?

I actually prefer the staggered look. Also, wider front tires means less steering feel and more tramlining albeit with better front grip. The trade-off is a "looser" rear, though. That's the last thing a GT500 needs.

I don't launch mine, so sticking from a dig isn't a major concern for me. However, the MPSS do still provide good forward momentum even when accelerating quickly from a stop. Going from a slow roll-on on a hot day is no problem for them, unless you just plant your foot to the firewall. Like I said to OP, they do give up some grip on cooler days.

I'm highly considering the R888...but to answer your question I do not drive in the rain unless I get caught in a small storm!
