Your body literally converts starches into sugars. That's the entire idea behind cutting out carbs, because your body turns them into sugar. Fiber is left out because it passes through. If you don't believe me, toss a handful of raw oatmeal in your mouth and chew on it for 2 minutes. Don't swallow. After 2 minutes it will taste like you have a mouthful of sugar. We did this experiment in the 7th grade and then measured the sugar content, it increased drastically. There are a lot of people that say you need complex carbs because your body has to "work" to convert them to sugar, but it doesn't take very much work for that to happen. FWIW, "thousands of years" is extremely small on the scale of how long people have been around. Also, they teach bullshit in middle school and high school nutrition classes. The attorney general in the 1970s (I think) apparently was behind the increased consumption of carbs and the war on fat. Whether he was in the back pockets of the sugar lobby, or was actually sleeping with his vegetarian secretary, we will never know. All we know is that heart disease, obesity, and diabetes have increased significantly. We eat about 2.5x the amount of sugar now than we did 100 years ago. Also, watch this when it comes to calories in vs calories out. It's long and a bit slow but you'll learn a thing or two.
