I am currently thinking of purchasing a new clutch and flywheel and I am lost with so many options out there. My cobra is my daily driver and will see the strip about once a month. Any suggestions ?

If you are below 500rwhp then go with the SPEC2 disc and SPEC3 pressure plate. I drive my car an average of 60 miles a day in Houston traffic with this setup. The clutch feel is lighter than stock, allows a little slip, and engages quickly. If you are around stock rwhp numbers then a SPEC2 system will be fine.

I have a mcleod kevlar disc clutch with my t-56 in my WS6. I dont know if they are interchangeable? Kevlar disc is great. Still hold like a champ and has had 30k miles of hard driving.
