What is the stock thermostat temperature on 94/95 5.0s? I know that cooler is supposed to mean more power but I also believe that an engine has an optimal operating temperature. What other temperature thermostats are you guys running and what is the strategy for this?

I believe it is a 195 thermostat. Going to a 180 seems to be the most popular switch. A 160 will usually cause problems, CEL and what not.
The stock is either a 195º or 197º.
Go with a 180º "hi-flow" stat. I wouldn't say it gives you "more power", but it does make it run very slightly richer... and there is the slight cooling advantage.
