With my stock t-45 and 4.30 gears it is possible to trap 125 mph at 7038 rpms in 4th gear. Is there a way to calculate how much hp I will need to do this? assuming a 1.5 in the 60'

There are several horsepower calculators out there, just do a search. You will need to know the weight of the car with driver. I'm guessing in the 450 to 500 rwhp range. Most of the calculators give you flywheel horsepower.
