I’m outside Houston. Central Texas, including Austin, is considered the Mecca for Texas BBQ. Presuming you tried places like Black’s, SaltLick or Franklins. All are fantastic- hard to get bad BBQ anywhere around Austin.

There’s a special place in Lexington, TX called Snow’s. Tootsie, like every other pitmaster in Texas knows that good brisket requires hours of slow smoking and respects the process.

There’s a show on Netflix that does a wonderful job sharing Tootsie’s story and paying tribute to her work. Absolutely worth watching.

Cool. I've had BBQ from h town to austin and the only thing I know is the older/more run down the place looks the better the bbq!

If you want to understand how to BBQ, get the book Meathead. Just add it to your Christmas list.

He explains the science side of each type of cook.

Of course if you don’t want to level up, you will still get good results doing it your way. As long as you don’t burn the shit out of it, it will still be edible, just not as good as mine...........

Depends how you are evaluating. Franklin hasn’t won anything on the bbq circuit. He’s done a few competitions but hasn’t placed that great.

I striated laughed at this!

He may have some good info but he is far from an authority on BBQ that I listen/go to. A lot of what he says and publishes is presented as absolute and often ignores other methods.

If you want real information that isn't hinging on luring you into buying a membership on his site or a book listen to Harry.

Was not familiar with Harry Soo. Just read his story and appreciate his self-taught approach. I’ll watch the videos and learn from his instruction; but I am from Texas so I’ll probably stick with low and slow.

He may be self taught but his methods are also backed in science and he is no joke.

If I am being honest I had problems turning out consistent quality BBQ before watching his videos. After a few night shifts on YouTube I seldom have a problem.

His methods aren't new or ground breaking by any means. He just fully explains and shows the process of how to make great quality bbq and doesn't leave out important information that others do.
