Been putting the cobra back to "stockish", looking to trade it in or sell it soon. Looking for a new comp orange '16, GT, PP, Recaros, black roof. Also have been looking at low mileage '10-'12 GT500's.

Approved for $40k, looking to spend no more than $35k. True car has the GT priced at 35k and change. Which would you choose and why?

Well if you're looking for a low mileage gt500, especially the 11-12, they'll be priced above 35k. Closer to 40k

All depends on usage and how long you'll keep it.

Pro-tip: Never buy brand new.

GT500 hands down, but it will probably be a lot easier finding a 2010 under $35k than an 11-12. IMO 11-12 is the best choice for your budget, but expect to pay a little more (around 40k). 13-14s are king but will cost 15-20k more than an 11-12.

edit: nothing's wrong with a 2010 as made out to be, but for a few grand more, the 2011-2012 is a better value. In straight line performance, it's pretty much a driver's race, and the iron block is a lot cheaper to build. However, if you want to road race, the aluminum is the way to go. Also, 2011+ offers the optional recaros which I really wish my 2010 had.
