98 Cobra Loosing Power on Highway

So last summer right after I finally go this thing running I drove it to a car show about an hour away. Well on the way back, about 20 miles from home I was going about 60 and when I would push the pedal down to go up a hill the car would act like it wants to die.
I've taken it out a few times around town and had some fun after that and it didn't do it..

I'm wondering if anyone has had a similar issue? I've checked everything I could think of on it an it all seems fine.

Any help would be great, Thanks!

5th, not steep hills, had a 96 cobra years ago and drove on the same hills for years. should'nt matter. it did it in every gear.

I put a new pump in it. Car sat for over 2 years and had the tank out. Has all new lines, pump, injectors, plugs, and wires. I did notice it's leaking coolant out the back of the manafold.

I even took it out a few months ago and ran it through the gears and it ran great. So that's where im lost.
