Could've sworn I saw a thread on LightningRodder.com where I guy was selling some dyantech headers that had the cats with them. Other than that, I don't know anyone else at the moment.

Im looking at a truck that has no cats. Is this who everyone runs? How hard is it to install them?

If you know what you are doing, they are not hard to install IMO. I am running Dynatech LT's with no mids to a maggnaflow cat back on my truck.
