Granny shifting is when you make at attempt to drive smoothly. Like when you are trying to impress your new girlfriend's mother.

Difference between double clutching and rev-matching:

Double Clutch:
Depress clutch pedal
Bring car out of gear
Release clutch pedal
Touch throttle to bring engine to the speed you expect when you engage the new (lower) gear
Depress clutch pedal
Engage gear
Release clutch pedal

Rev Matching:
Depress clutch pedal
Bring car out of gear
Touch throttle to bring engine to the speed you expect when you engage the new (lower) gear
Engage gear
Release clutch pedal

You can actually have the car in the lower gear while you blip the throttle also and when the rpms are where you expect them to be in the lower gear, you can release the clutch.

Heel and toe shifting:
I don't feel like typing that mess so here's a link.
TurnFast! • Heel-Toe Downshift

I rev match every once in a while. Just because that's the cool thing to do  lol. No, there's really no need to do any of this unless you're on a track. And the term "granny shifting" is just a term to insult the slower shifting methods of some drivers. There's really no actual definition of it.
