Well, Motor Trend tested it in 90* heat and still was able to average 196MPH. This test was done in cool 60* air. I would imagine in the same conditions on that same track the GT500 would hit 200+MPH.
On the flip side of that coin, you also get the benefit of pushing through thinner air. Probably not enough to offset the temps. I also don't think they averaged 196, that was their best run in either direction.
Either way, Ford has never provided any sort of proof that it actually went 200. Just a claim. I'm sure they did hit it in Nardo, because that track is huge.
