When doing the instrument cluster diagnostic readout trick, what does the oil one measure and does anybody know why mine would read 000 all the time?

I noticed this too, but I found when you do the diagnostic check and dont start the car the oil reads 250 or 255.

I cannot figure out what this is though, I guess quantity but in what measurment. If someone knows I would be interested in what this is?

Try this

Displays the code (0-250) for the oil pressure switch input to the HEC. Oil pressure gauge will indicate present oil pressure. Normal oil pressure (greater than 6psi) will display a value between 000 and 176. A low oil pressure or an inoperative engine oil pressure switch (less than 6 psi) will display a value greater than 176.

Yes, 000-176 is normal when the motor is running. It means that the oil pressure switch is seeing around 6 psi. When the motor is off the switch obviously doesn't see 6 psi and the diagnostic code is greater than 176.
