From what I'm reading, eggs can be stored at room temperature as long as their protective coating hasn't been removed when processing/packaging. So eggs purchased fresh at a farm can be stored at room temperature. That, I didn't know.
We wash the protective coatings (the "bloom") off the shells that seals the naturally porous shell. When it's gone it allows bacteria to enter and spread. So after they are washed they need refrigerated to keep bacteria at bay.We are one of the only countries whom refrigerate our eggs.

They must have a roach problem. First time you get some extra protein in your cereal it gets kept in the fridge.
