Curious, on Whipples site it says the 2.75 is good for 19 lbs. How does a 3.2 do 21?

If you still have it let me know. I have a 3.50 and a 3.00. The 3.5 put me at 14psi and the 3.0 put me at 22psi.I want something around 16-18psi so I think the 3.25 is what I need.
