If I was going to shoot specifically for HDR with a canon digital rebel XT, what would be the method you recommend for the best results? Raw or multiple exposures (how many)? photoshop CS3 or photomatix?

Dude, read the thread. You CANNOT make an HDR from a single JPEG.

you can, it will just not be true HDR, and will not have the properties of true hdr pictures
example.
