Can you change the body after you get a VIN?

After an order has been assigned a VIN how long until the order is locked and what changes can be made before the order is locked? I read that colors and options like Nav and seats can be changed, can the order be changed from a coupe to a convertible or vice versa?

I was told by my salesman that once a vin has been assigned and issued that no changes can be made, I'm sure someone who knows for sure will chime in.

I changed my order after I had a VIN, but since coupes and verts have different vins, I'm not sure you ca change that???
