Has anyone seen this done? I'm intrigued by the idea as a friend works at a vinyl shop so I could get a bit of a sweetheart deal. My other idea is Race Red stripes on Kona Blue.

Depends on the stripe. I like a silver/blue combo or a light charcoal/blue. Grabber blue might look a little cartoonish with say a Boss type stripe.
My two cents.....
Both ideas sound garish to me. I've seen race red on grabber blue, I believe you can actually get that factory on the GT500s, or at least you could, and it was pretty ugly. There's just too much contrast between the two colors.
I'm not sure how grabber blue on KB would look either. Grabber is loud and flamboyant and KB is more understated. They seem like polar opposites.

Id think it would be a little too gaudy. I think silver, black, white or off white would look good.
I did silver and love it. It was a pain though.

Personally I think the gt500 stripes look sick on these rides, the thin stripes
I don't like stripes on any car really. And it seems like some Mustang owners are just as bad as any ricer when it comes to exterior mods.
