The size of the MAF isn't really that important on a blow through design. As long as it's roughly 75mm (3 inches), it'll be just fine. In fact a bigger one would be useless because the intercooler piping is only 3" anyway.
Good choice on the dedicated blow through, you'd have a hard time getting it dialed in without it. I think that's going to fix your problems. My meter finally pegged at 20 lbs and over 600 rwh (on my old car, I haven't pushed this one yet).
