Some great tips here!

Jerky, bacon wrapped both VERY VERY good!

BTW, if your venison tastes gamey, throw it away. Venison should have no more of a "wild" taste than beef if properly cared for.

Oh, also makes GREAT sausage! Mix w pork fat and seasonings. Pop inside a biscuit....mmmmm

Damn, what I wouldn't do for a couple pounds of tenderloin (backstrap) right now. Some good inputs here! I've eaten deer all my life, but we only really did three things:

a) backstrap (egg wash, flour, salt, pepper, butter crisco and voila)
b) burger (w/ 25% or so ground pork)
c) the rest into jerky

The age of the deer and what the main food source was will dictate the "gameyness". Not that you didn't know already :)
