I recently started grilling with charcoal. I had no idea what i had been missing!
The other night I made chicken breasts with a dry rub of ground fennel, granulated garlic, salt and pepper, brushed with olive oil. Grilled them at 350F for fifteen minutes with a couple of handfuls of pecan chips tossed on the coals, it was awesome! To go with it I made a relish of kalamatta olives, green olives, tomatoes, celery and some olive oil and lemon juice.
The other thing I found out is you can use a grill to bake bread with, too! Holy freaking cow, fresh bread, in a cast iron skillet, and again, a handful of pecan chips tossed on the coals.
