I hear ya. I was in the same boat with the offset. I wanted the 1050 but the 800 comes with a griddle. That's what sold my wife on getting one.Those butts look awesome. I just got the Masterbuilt 1050 early last month and have used it multiple times per week. After using an offset smoker and vertical smoker for years, this thing is life on easy mode with the electronics that control the temp. Here are some ribs I made a few weekends ago.

Really good Tony. Brisket, cream cheese and Monterey Jack. About 2.5 Hours. 2 hours at 225* and about 1/2 hour at 350* brushed with BBQ sauce. Killer good. Made ground sirloin blue cheese burgers after those. Also smoked some beets, yes beets for another meal and a salad. Killer good too. I has to sample one.Nice Brad.
